red, white & blue{berry}.

July 4, 2011 by Hillary 6 Comments

Good morning & HAPPY July 4th!

I’m not exactly the most patriotic person you’ll ever meet, but because I love colorful eats, I definitely rocked a red, white & blue{berry} breakfast today.

004
1 c. Barbara’s Shredded Spoonfuls, 1/2 (white) banana, organic blueberries + strawberries, 1 T walnuts + sprinkle of toasted pecans, 1/2 tsp. chia seeds, unsweetened vanilla almond milk

007

But before I enjoyed my cold bowl of cereal, I headed outside for my easy 2-mile run. I learned my lesson Saturday, so today I was out the door by 7:00am. I ran for 24 minutes, roughly ~2.8 miles, and finished with a bit of strength training at the complex’s rec room. It wasn’t much, but a sweat sesh first thing in the morning is a great way to start any day/week!

I think today will be another relaxing day with more poolside reading (I’ve got a lot between my internship and prepping for the AFAA certification exam).

What’s on your holiday agenda?

Stay cool,

Hillary

Today my dad and I got up early and rode north along the coast.

TOUR DE TRINIDAD II

Distance: 33.0 miles
Time: 2 hours 41 minutes
Average Speed: 12.3mph – there was some climbing, indeed.

I was curious how our stats scaled with our Tour de Trinidad ride last summer. How weird that our distance, time, and average speed were nearly identical!

A very beautiful and enjoyable way to x-train… and burn a bucket of calories!

Once home, I inhaled 1 huge g-free buckwheat + flax pancake (prepared with unsweetened vanilla almond milk, egg, chia seeds and oil) topped with 0% plain Greek yogurt, fresh berries and drizzle of maple syrup.

I’m off to coffee with a friend and then I must study study study before dinner with the aunts + uncles…

Enjoy the rest of your weekend!

HELP! Is anyone noticing that my photos are overlapping when you view my posts!? I’d appreciate it if you’d let me know because this is not how I intend to format my posts. It doesn’t show up on my monitor that way, so I am curious as it doesn’t appear the same way on my parents’ screens =/

twenty two.

June 19, 2011 by Hillary 12 Comments

If that isn’t one delicious way to begin my 22nd year, I don’t know what is.

Per my request, my mom made lemon poppy seed challah French toast topped with Greek yogurt and fresh berries for my birthday breakfast.

I enjoyed two scrumptious slices.

… and perhaps the most special part of our meal was the apple orange carrot ginger lemon juice handmade with the juicer my mom’s had since her early twenties.

It was a refreshing way to hydrate after a 21-mile father-daughter bike ride along the coast.

HAPPY Birthday to my birthday twin, Miss Tina!

I gotta go figure out what I’m cookin’ my dad for dinner. It’s Father’s Day, too, after all…

Berry Lame

Can you hear my cheering? It’s the weekend – woot woot!! When you’re a full-time student, you quickly appreciate the weekends so much more, that’s for certain. Monday feels like forever ago. I hope that’s not an indication of how slowly the semester will progress. I just keep thinking of that diploma hanging on my wall, and I chug right along.

My mind hasn’t exactly been in blog posting mode this week. I took a pathetic number of random food photos yesterday + today. Perhaps I’ll put my camera to better use over the weekend, ya?

002

#1 snack: free Greek [Chobani loves to send me coupons!!] + fresh berries & honey.

011

#1 free chocolate bar: Coffee Bean Dark Chocolate Attune. These get a high rating from me, a complete chocolate snob. Agree!?

012

Healthier chocolate. I’ll make room in my cupboard for you.

019

#1 six-minute salad: fresh spinach, r-berries, red onion, avocado, chevre, olive oil, balsamic + pepper.

I went to the gym for the 7th day in a row tonight. I didn’t go with much enthusiasm, or use my successful exercise tips; consequently, I had a chill – though sweaty!! – workout.

  • 1 mi. indoor track run @ 8:40
  • 20-minute treadmill walk
  • 20-minute StairMaster

The weather isn’t suppose to be at sauna temperatures the next couple of days, so I’m double-crossing my fingers I can go for a run outside. A true runner can only train inside for so long before going stir-crazy.

I’ll talk write more later. I’m closing up shop for the night.

When do you prefer to exercise – morning, afternoon, or evening? Any late-night exercisers?

Dinner for Three

June 14, 2010 by Hillary 17 Comments

I wanted to write this post last night, but my body clock is completely different since being home; in other words, I am exhausted by 10:00pm. I slept for 12 hours last night– yikes! I guess it was resting-up for my birthday week!

Anyway, there were a lot of great eats yesterday. I enjoyed going shopping at our local co-op – it’s seriously a health nut’s heaven; I came home with two full bags of organic goodies. After unloading, I dove straight into a 2% Fage with organic blueberries, our neighbor’s raspberries ,and a drizzle of organic agave – it won a blue ribbon for “Snack of the Day”.

022

Next, I dove into another new find. I think this is my new favorite Chocolove flavor – love love love!

028

What’s your favorite?

I couldn’t resist this at the market. Ya’ll know how I love my green tea. This is was super strong, but at only 6 ounces, I guzzled it all. I could almost taste the antioxidants ; )

039

Catechins are powerful antioxidants in green tea that help maintain a healthy heart and neutralize cell-damaging free radicals.

Award-winning Purple Haze: the perfect mixture of lavender and fennel pollen gives this cheese a sweet flavor that plays off the acidity in the cheese for a delightful complement.

Arugula, Gorgonzola & Walnut Whole Wheat Pasta

[original recipe @ How Sweet It Is]

In a medium pot, bring water to a boil. Cook 1 lb. of whole wheat pasta of your choice until al dente. Meanwhile, in a large skillet sauté 2-3 cloves of garlic in 2-3T of olive oil. Add 3-4 c. of fresh arugula and stir until wilted. Drain pasta, add arugula mixture, a couple additional tablespoons of olive oil, 1/2 c. of crumbled gorgonzola, and a couple handfuls of toasted chopped walnuts. Combine thoroughly, then finish with a sprinkling of freshly-grated hard cheese [parmesan, asiago, etc.] – enjoy! Serves 4.

061

We also enjoyed a colorful salad full of homegrown lettuces, organic avocado, tomato, red onion, chive flowers, orange-infused olive oil & balsamic.

Chocolate Strawberry Scone Cake

Leavenworth, WA • Where To Eat🍴 I was expect Leavenworth, WA • Where To Eat🍴

I was expecting all things beer, brats and pretzels in Leavenworth (not really my jam) 🍺🥨🧀, and while there’s plenty of it, I was delighted to find plenty of delicious eats for my “foodie” taste.

We went to all of these 3 places more than once during our quick stay - highly recommend!

☕️ @argonautespressobar: Located at one end of Front Street, this adorable coffee bar has delicious espresso drinks, breakfast items, and the best view!

🥐 @tumwaterbakery: Incredible pastries, avocado toast on artisanal bread that’s a feast for your eyes... and I’m eager to go back and try their wood-fired pizza!

🍜 @yodelinbroth: Literally some of the best food I’ve had (ever!), and that’s saying a lot. I had the Yodelin soup with housemade wild PNW halibut bone coconut curry broth, udon noodles, heaps of veggies and wild salmon - it was nourishing to my core as we ate it outside in 30 degree weather. I even bought some of the broth to recreate this meal at home, yum!

winter wonderland getaway ✔️ We had snow much winter wonderland getaway ✔️

We had snow much fun exploring the picturesque Bavarian town of Leavenworth, WA for a much-needed mid-week getaway to the mountains. 🏔

We stayed in a cozy little cabin @logecamps right on the Wenatchee River (one day I’ll be back to stay at the stunning @phleavenworth), played in Enchantment Park, took a drive to Lake Wenatchee, and discovered some of the best food downtown (I’m saving my food recs for another post).

Nestled between the snow-capped Cascade Mountains with the river running through town, it’s quite magical in the middle of winter. ❄️ I’m already dreaming of heading back for some summer adventures!
