Good morning! Happy July! (I know, I’m a little late catching the July bus.) I think I’m just still in awe that June – one of my most favorite months of the year – is already done-zo. Didn’t I just finish up the semester? Wasn’t it just Memorial Day? Crazy how time flies… simply nuts.
Anyway, I hope you don’t mind that I want to extend the June Jubilee for one more post. I can’t seem to move on to July without expressing a few favorites (as I did at the end of 2010) from my birthday month:
A few of my favorite things…
Food: mangoes.
Though I love me some juicy, fresh mango, I’ve actually been eating this tropical fruit frozen and dried. TJ’s sells unsweetened dried mango that I adore – its a sweet (no sugar added) treat that’s easy to pack for nutrition on the run. As for the frozen mango, it has made several appearances in Sunshine Smoothies and coconut water refreshers (recipe soon!).
Nutrition Note:
Mangoes are an excellent source of beta carotene – as indicated by their vibrant orange flesh – and one average-sized fruit supplies over 60% of the RDA for Vitamin C.
Beverage: minty mojitos.
Alright, I only had 1 raspberry mojito during the entire month, but it reminded me just how much I enjoy this refreshing minty cocktail. I have adult beverage recipes on my mind ;)

Exercise Move: BodyRock
In June, I discovered BodyRock.TV. Many of you might already be familiar with the amazing abs of Zuzana, but for those that aren’t, visiting the website is instant inspiration! I haven’t done an entire 12-minute interval workout yet, but I have been incorporating a handful of BodyRock exercises into my gym routine. I love the intensity of the no-equipment moves, and I can feel my body rockin’ into better shape already :) By no means do I plan to replace my exercise regimen with 12-minute interval training; though, I think it’s a worthy addition to my workouts.

This is currently the CD blasting on my car stereo as I drive around with my windows down.
Activities: baking + bike rides.
Finally, I can move on to July. I’m only a day behind.
I hope you have a relaxing, rejuvenating Independence Day weekend (for my U.S. readers). I’m off to tackle Long Run #3 before it heats up, pick up some fresh produce at the farmers’ market, get a pedicure, and do some poolside reading. Yeah, rough life.
