So, I write…

Today hasn’t been a terrific Tuesday. It’s been one of those days where you encounter one rude, snappy person after another. It’s been one of those days where you have an afternoon breakdown in your car and the the next best thing to self-pity is a foamy latte and piece of Chocolove Dark Chocolate with Sea Salt and Almonds. Then, to rid of any lasting frustration, you write. Writing is how I deal. I like to spell out my life on “paper”. I like pressing each individual key on the keyboard in a syncopated melody. I like taking my life and turning it into poetry. I don’t talk a whole lot. When I do, it’s quietly. But when I write, I can be bold, precise, truthful, raw. Writing is how I deal. So, that’s what I am doing now. There will also be some photographs thrown in from yesterday. Yesterday was a good day, and since I like to focus on the positives, we’ll stick with Monday, fast forward over today, and then take it from Wednesday… Wednesdays are always wonderful.

I had an amazing afternoon snack. After my awful experience with whey protein powder, I was so excited to have found Amazing Grass to add to my Chocolate Cherry Bomb Green Monster smoothies. I had no stomach issues this time around – my tummy loves GREENAGE.

1 frozen banana
1/2 c. frozen cherries
1 1/2 c. spinach
3/4 c. unsweetened vanilla almond milk

With a boost of green energy, I was ready to do some baking! Enter one of Angela’s splendid vegan creations…

Cherry Coconut Butter Banana Bread

[original recipe @ Oh She Glows]

  • 1 3/4 c. whole wheat flour
  • 2 T ground flax
  • 1 tsp. cinnamon
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 2 1/2 ripe bananas
  • 1/2 c. real maple syrup
  • 1/4 c. unsweetened vanilla almond milk
  • 3 T canola oil
  • 2 T coconut butter
  • 1/2 c. chopped + toasted pecans
  • 6-8 halved + pitted cherries
  • 1 tsp. unsweetened coconut

In a medium bowl, mix together dry ingredients. In a small bowl, melt coconut butter in the microwave for approx. 20 seconds. In another bowl, mash 2 whole bananas, then add other wet ingredients (including the coconut butter). Whisk until combined. Add wet to dry. Mix minimally, then fold in chopped pecans and other half of banana, coarsely chopped. Plop into a greased loaf pan and place cherries on top along with a sprinkling of leftover chopped pecans and 1 tsp. of unsweetened coconut. Bake @ 350* for 45-50 minutes.

Note: My loaf did not turn out as ooey gooey as Angela’s. In fact, it was quite the opposite – dry and ‘wheaty’. After spending a sh*t ton on pecans at the store and chopping them for the recipe, I forgot to fold them in – oopsie. Perhaps follow Angela’s recipe more precisely, as mine didn’t get a whole lot of praising from my critics. I ended up smearing mine with [non-vegan] buttah : )

I often get lazy when it comes to dinner – it’s, by no means, my favorite meal of the day – but, I try to keep it nutritious nevertheless.

Two Variables

I have been wanting to make a Chocolate Cherry Bomb for… months! I don’t really know what was stopping me – I think it was the ridiculous price of cherries. Anyhow, I finally purchased all of the ingredients I needed to create this adored smoothie, and today was the day I decided to give it a whirl.

Chocolate Cherry Bomb: Hillary’s Whey

  • 1 packet Tera’s Whey – fair trade dark chocolate
  • 3/4 c. organic unsweetened vanilla almond milk
  • huge handful of homegrown [organic] spinach
  • 1/2 c. frozen organic cherries
  • 1 banana
  • ice

Variable 1: Unfortunately, my CCB experience was not a good one. The smoothie tasted pretty darn delicious – it was extra-thick [from the whey powder I presume], and had a subtle chocolate flavor. However, my stomach is not so happy at the moment. I would like to blame it on the packet of protein powder, as I don’t typically add ‘supplements’ to my food; perhaps, I am just unusually full from the foreign 20 grams of protein in my “Green Monster”. I didn’t realize the individual packet also came with a 110 calorie price tag. I only managed to drink half of the smoothie, as that was a hefty snack in itself!

Variable 2: Another reason for the knot in my stomach may be due to the fact that I’m in charge of the food for a 200 top wedding this weekend – gah! I know… what? I was asked to do the job less than two weeks ago – ummm, crazy? I told the bride many times that I work for a caterer, but am not a professional myself. We’ll see how this goes. Wish me luck!

Alrighty, folks. I’m going to go be a vegetable on the couch and watch SYTYCD.

Snack Attack

Hello hello. Happy Friday!

With no school today [due to California’s non-existent budget], it feels like Saturday…but lucky for me, the weekend has just begun! I slept in this morning and, for once, it felt great! My body certainly need those extra zzz’s. However, I still have a deep cough and don’t know what to do about it besides rest.

I made a very simple bowl of oats, along with my 36th cup of Echinacea Complete Care tea, for brex and then got to cleaning house. Yes, even as a 20-year-old college student, I am still anal about tidying my house before having guests : ) Then my roommate and I hit up Trader’s, I ate snack #14, and here I am…

Speaking of snacks, I feel like Miss Allie lately. Normally, I am a routine eater and minimize my amount of random, mindless snacking; however, the past few days I’ve been attacking the snacks:

Anxiously awaiting for Tasha to arrive. We were suitemates my first two years of college, and I’ve really missed living with her this year. I am looking forward our girly weekend. Anyone else seeing Valentine’s Day?

It’s no secret that I suffer from chronic anxiety and panic attacks. Or at least I don’t intend it to be. Because while there can be a lot of shame and embarrassment around both of these, I know I’m not alone in my experiences. While I’ve leaned toward the more anxious side most of life, my bothersome anxiety has steadily increased since my mid-twenties - some periods being worse than others. 

It’s not a complete surprise that my mental health has taken a dip during my first full gloomy Seattle winter — in the height of a pandemic. 

Here are some ways I have been nurturing my body & mind as I work with a team of practitioners to work on understanding the **root causes** of my panic, and to live with more ease. 

» no coffee (not even decaf)

» meditating regularly - I’m using @insighttimer 

» gentle movement

» weekly therapy sessions

» attempting cold showers (this is hard for me!): if you’re interested, you can research how this impacts the nervous system

» working with a naturopathic doctor to focus on gut + hormone health

» trying a new Rx - a decision that took years of consideration

» lastly, opening myself up to vulnerable conversations/sharing my story and my experiences in efforts to reduce any shame and connect with others

Leavenworth, WA • Where To Eat🍴 I was expect Leavenworth, WA • Where To Eat🍴

I was expecting all things beer, brats and pretzels in Leavenworth (not really my jam) 🍺🥨🧀, and while there’s plenty of it, I was delighted to find plenty of delicious eats for my “foodie” taste. 

We went to all of these 3 places more than once during our quick stay - highly recommend! 

☕️ @argonautespressobar: Located at one end of Front Street, this adorable coffee bar has delicious espresso drinks, breakfast items, and the best view! 

🥐 @tumwaterbakery: Incredible pastries, avocado toast on artisanal bread that’s a feast for your eyes... and I’m eager to go back and try their wood-fired pizza! 

🍜 @yodelinbroth: Literally some of the best food I’ve had (ever!), and that’s saying a lot. I had the Yodelin soup with housemade wild PNW halibut bone coconut curry broth, udon noodles, heaps of veggies and wild salmon - it was nourishing to my core as we ate it outside in 30 degree weather. I even bought some of the broth to recreate this meal at home, yum!

winter wonderland getaway ✔️ We had snow much winter wonderland getaway ✔️

We had snow much fun exploring the picturesque Bavarian town of Leavenworth, WA for a much-needed mid-week getaway to the mountains. 🏔

We stayed in a cozy little cabin @logecamps right on the Wenatchee River (one day I’ll be back to stay at the stunning @phleavenworth), played in Enchantment Park, took a drive to Lake Wenatchee, and discovered some of the best food downtown (I’m saving my food recs for another post).

Nestled between the snow-capped Cascade Mountains with the river running through town, it’s quite magical in the middle of winter. ❄️ I’m already dreaming of heading back for some summer adventures!
