It’s a quiet Friday night in for me tonight. I went to a different yoga class tonight — the dance-y warm-up I enjoyed, the random jumping jacks not so much. I pedaled on the spin bike for 10 minutes prior to hitting the mat, but that was it in terms of my Friday fitness.

I was planning on taking it easy today and tomorrow in preparation for Race Day, but I was not planning for my right calf to give me grief. Hold tight loose, legs… one more day, please! I rolled around around on a foam roller after savasana — tight calves and quads is an understatement.

stretch. ice. rest. breathe. repeat.

Anyway… I told ya’ll I would tell you more about the internship I’m doing this semester in addition to my full plate of nutrition classes. Two weeks in, and things are finally rolling… fast!

This semester I am a Nutrition Mentor for FitU, a nutrition and exercise adherence program available to Chico State students.

What’s FitU?

 

 

 

Students enrolled in the program pay $50 for 4 1-hour sessions with a nutrition mentor and 4 1-hour sessions with an exercise adherence mentor. Upon completion, the student gets a $25 reimbursement, plus a t-shirt and water bottle. Neat, huh?

I will have 4 clients this semester; so, theoretically, 16 appointments in total. Each week, I meet with the fellow interns and our mentors to anonymously debrief and gather insight on our upcoming appointments.

I see my first client Monday – eek!

Ever since I transferred universities and declared Food & Nutrition Communication as my major, I’ve wanted to get involved with the program. Last semester, I completed the preliminary internship – in conjunction with taking a required course, Nutrition Education & Counseling – where I learned about the technique of Motivational Interviewing,

I did not go to school to become a Registered Dietician, and did not envision myself in a counseling setting either. However, through my undergrad studies and various internships, the counseling aspect of nutrition (more so, general wellbeing) has seemed to click with me the most.

Fuel. Fitness. Focus.

I’m excited to see if my experience with FitU will turn that light on or off…

the first of the last.

Today was the first day of my last fall semester of college… undergrad, that is.

Back in April, I posted about the courses I’ll be taking this semester [The Final Fall Four], but since then I swapped out a class, so now I’m taking Nutrition Counseling instead of Nutrition and Physical Fitness (which I’m looking forward to taking in the spring).

Fall 2011 Classes

CONSUMER HEALTH – ONLINE

Examination of major health care consumer issues from historical and contemporary perspectives. Discussion of cost, availability, and quality of health care and their relationship to political and economic activities. Identification of national, regional, and local health trends affecting consumers. Analysis of individual and collective consumer strategies.

MAGAZINE WRITING

Techniques of writing nonfiction articles and features for publication; where to find material, markets. Student writings may appear in campus publications such as The Orion.

NUTRITION Counseling & Education

In addition to this class, I am participating in a supplemental nutrition counseling internship; one of the objectives of this extra ‘class’ is to prepare students for the opportunity to be a mentor for the FitU program on campus.

NUTRITION THROUGHOUT THE LIFECYCLE

A survey of nutritional needs from conception to death, including the relationship of nutrients to health and well-being and factors which affect food selection of different population groups.

Also in the mix:

I am the Communications officer – a weekly commitment – for the Nutrition & Food Science Association (a.k.a. Nutrition Club). Believe it or not, I’m looking forward to having a full plate again (pun intended) – good times ahead!

Hopefully I’ll be a bit more disciplined about blogging and sharing my nutty recipes, too. Oh, and I must register for a race or two here pretty soon because this runnin’ nut is craving a fun, new training plan.

I have a 7:30am spin class on the agenda tomorrow to start off my Tuesday, so I better hop into bed… It’s a school night.

P.S. I crossed off one of my 10 goals for 2010… better late than never. I’ve parallel parked twice in the past couple days without causing damage to Little Blue or any other vehicles. It’s the little things.

It’s no secret that I suffer from chronic anxiety and panic attacks. Or at least I don’t intend it to be. Because while there can be a lot of shame and embarrassment around both of these, I know I’m not alone in my experiences. While I’ve leaned toward the more anxious side most of life, my bothersome anxiety has steadily increased since my mid-twenties - some periods being worse than others. 

It’s not a complete surprise that my mental health has taken a dip during my first full gloomy Seattle winter — in the height of a pandemic. 

Here are some ways I have been nurturing my body & mind as I work with a team of practitioners to work on understanding the **root causes** of my panic, and to live with more ease. 

» no coffee (not even decaf)

» meditating regularly - I’m using @insighttimer 

» gentle movement

» weekly therapy sessions

» attempting cold showers (this is hard for me!): if you’re interested, you can research how this impacts the nervous system

» working with a naturopathic doctor to focus on gut + hormone health

» trying a new Rx - a decision that took years of consideration

» lastly, opening myself up to vulnerable conversations/sharing my story and my experiences in efforts to reduce any shame and connect with others

Leavenworth, WA • Where To Eat🍴 I was expect Leavenworth, WA • Where To Eat🍴

I was expecting all things beer, brats and pretzels in Leavenworth (not really my jam) 🍺🥨🧀, and while there’s plenty of it, I was delighted to find plenty of delicious eats for my “foodie” taste. 

We went to all of these 3 places more than once during our quick stay - highly recommend! 

☕️ @argonautespressobar: Located at one end of Front Street, this adorable coffee bar has delicious espresso drinks, breakfast items, and the best view! 

🥐 @tumwaterbakery: Incredible pastries, avocado toast on artisanal bread that’s a feast for your eyes... and I’m eager to go back and try their wood-fired pizza! 

🍜 @yodelinbroth: Literally some of the best food I’ve had (ever!), and that’s saying a lot. I had the Yodelin soup with housemade wild PNW halibut bone coconut curry broth, udon noodles, heaps of veggies and wild salmon - it was nourishing to my core as we ate it outside in 30 degree weather. I even bought some of the broth to recreate this meal at home, yum!

winter wonderland getaway ✔️ We had snow much winter wonderland getaway ✔️

We had snow much fun exploring the picturesque Bavarian town of Leavenworth, WA for a much-needed mid-week getaway to the mountains. 🏔

We stayed in a cozy little cabin @logecamps right on the Wenatchee River (one day I’ll be back to stay at the stunning @phleavenworth), played in Enchantment Park, took a drive to Lake Wenatchee, and discovered some of the best food downtown (I’m saving my food recs for another post).

Nestled between the snow-capped Cascade Mountains with the river running through town, it’s quite magical in the middle of winter. ❄️ I’m already dreaming of heading back for some summer adventures!
