Simply Sweet Signs of Spring

It’s official…Spring 2010 has SPRUNG! It seems as though we’ve all been enjoying lovely weather lately – I sure hope it sticks around. I know that sunshine can make any day better, which is why I’m looking forward to spending the rest of the semester in sunny Chico. I can’t wait to be able to read poolside…with ‘screen and a hat, of course.

It was an unusually beautiful warm day in HumCo yesterday…warm enough to get an afternoon ice cream cone with my mama. I could not turn down a scoop of organic Honey Vanilla Lavender ice cream on such a day : )

The preview of Spring weather inspired my mom and I to make something light and fresh for dinner. Where else do we look for inspiration? …none other than, In Praise of Leftovers.

We made Sarah’s Moroccan Grains & Greens Salad, adjusted slightly to our own personal tastes…and with the ingredients we remembered at the grocery store.

Barley [grain], Chard [greens], Sweet Tomatoes, Sunflower Seeds, Salty Feta, Parsley, Green Onion, Olive Oil, Garlic, Dash of Dried Herbs, a Lot of Lemon

…and a few wild prawns

For some reason it feels like Sunday today, and since Sundays are designated for big, hearty breakfasts, I made waffles after my 7-mile run.

Sinless Saturday Waffles

1 cup whole wheat flour + 1/2 cup all-purpose flour

2 T ground flax

1 T baking powder

1/2 tsp. salt

1 1/2 cups almond milk [unsweetened vanilla]

1/3 cup canola oil

1 egg

[serves two]

I forgot the 2 T of sugar, but it wasn’t missed topped with plain 0% Greek, toasted almonds, strawberries & drizzle of agave-honey ‘syrup’.

Spending my last day at home facing the reality of homework. My ServSafe certification exam is Wednesday, and I’ve yet to memorize each and every detail about foodborne illnesses. It is an important topic to me, though [unlike the bonding of organic chemical compounds]. Have you read about my E.coli experience? Perhaps I’ll elaborate on the story sometime here in the near future.

Anyway, hope you are welcoming Spring into your life today. I’m going to take a stroll downtown and get an afternoon latte.

Fresh Thinking, Healthy Eating

The Nutrition Nut is back…and hopefully not so “nutty”. With my biology exam now in the past, the stress level has reduced 10 fold. I re-fueled with Pita Pit for lunch, the extent of my fast food. If you couldn’t have guessed, I despise fast food. In fact, I wrote a persuasive essay against eating fast food my junior year of high school. I could go on and on…

Although Pita’s motto is: “Fresh Thinking, Healthy Eating”, all of their options are not entirely healthy. I went the Greek route, usually a healthier one: regular pita bread (they were out of whole wheat), falafel, hummus, lettuce, tomato, cucumber, red onion, feta & tzatziki (cucumber yogurt sauce).

With a full tummy, I curled up in bed and napped for 45 minutes. I am drained from the week, and am being extra cautious to avoid any illness – the last thing I want to deal with over vacation. Looking forward to a relaxing evening, which does include SYTYCD : )

It’s no secret that I suffer from chronic anxiety and panic attacks. Or at least I don’t intend it to be. Because while there can be a lot of shame and embarrassment around both of these, I know I’m not alone in my experiences. While I’ve leaned toward the more anxious side most of life, my bothersome anxiety has steadily increased since my mid-twenties - some periods being worse than others. 

It’s not a complete surprise that my mental health has taken a dip during my first full gloomy Seattle winter — in the height of a pandemic. 

Here are some ways I have been nurturing my body & mind as I work with a team of practitioners to work on understanding the **root causes** of my panic, and to live with more ease. 

» no coffee (not even decaf)

» meditating regularly - I’m using @insighttimer 

» gentle movement

» weekly therapy sessions

» attempting cold showers (this is hard for me!): if you’re interested, you can research how this impacts the nervous system

» working with a naturopathic doctor to focus on gut + hormone health

» trying a new Rx - a decision that took years of consideration

» lastly, opening myself up to vulnerable conversations/sharing my story and my experiences in efforts to reduce any shame and connect with others

Leavenworth, WA • Where To Eat🍴 I was expect Leavenworth, WA • Where To Eat🍴

I was expecting all things beer, brats and pretzels in Leavenworth (not really my jam) 🍺🥨🧀, and while there’s plenty of it, I was delighted to find plenty of delicious eats for my “foodie” taste. 

We went to all of these 3 places more than once during our quick stay - highly recommend! 

☕️ @argonautespressobar: Located at one end of Front Street, this adorable coffee bar has delicious espresso drinks, breakfast items, and the best view! 

🥐 @tumwaterbakery: Incredible pastries, avocado toast on artisanal bread that’s a feast for your eyes... and I’m eager to go back and try their wood-fired pizza! 

🍜 @yodelinbroth: Literally some of the best food I’ve had (ever!), and that’s saying a lot. I had the Yodelin soup with housemade wild PNW halibut bone coconut curry broth, udon noodles, heaps of veggies and wild salmon - it was nourishing to my core as we ate it outside in 30 degree weather. I even bought some of the broth to recreate this meal at home, yum!

winter wonderland getaway ✔️ We had snow much winter wonderland getaway ✔️

We had snow much fun exploring the picturesque Bavarian town of Leavenworth, WA for a much-needed mid-week getaway to the mountains. 🏔

We stayed in a cozy little cabin @logecamps right on the Wenatchee River (one day I’ll be back to stay at the stunning @phleavenworth), played in Enchantment Park, took a drive to Lake Wenatchee, and discovered some of the best food downtown (I’m saving my food recs for another post).

Nestled between the snow-capped Cascade Mountains with the river running through town, it’s quite magical in the middle of winter. ❄️ I’m already dreaming of heading back for some summer adventures!
