Virtual Coffee Date II

Tuesday afternoon. Where’s the coffee? Shall we get a cup (or two) and catch up? I think yes.

If we were having coffee this afternoon, I’d first tell you that I’ve brought out my cold brew coffee maker from the back of the cupboard, and I have a jug of dark, cocoa-y coffee in my fridge. After an unnecessary streak of Starbucks sips, my bank account told me we should probably break up with The Bucks, temporarily, to save money for that beach vacation.

If we were having coffee this afternoon, I’d tell you that I finally, finally, updated my iPhone to the new operating system. Of course, of course, something went wrong and I was forced to reset my phone to factory settings. Thank the technology geniuses for iCloud; it totally saved me. Who else loves the flashlight feature?

If we were having coffee this afternoon, I’d tell you that I finally gave in and bought a new handbag that I’ve been ogling over for while. It’s totally justifiable though, seeing as that I’ve been using the same purse since my sophomore year of college. I was so excited about the 40% off sale (and free shipping) that I completely spaced to use Ebates — shucks.

If we were having coffee this afternoon, I’d tell you that I got accepted as a FitFluential ambassador. I found out last Friday and am proud to join the team. I had applied once in the past and didn’t “get in”, so I am glad I was tenacious and tried again!

If we were having coffee this afternoon, I’d tell you that I’m really enjoying IIN. We had our first coaching call last week, and it was splendid; I really enjoy my coach (who is all the way in Australia!). I love the variety of the lecture topics each week, and I feel inspired to healthify my already healthy life.

If we were having coffee this afternoon, I’d remind you that today is National Pancake Day; and, well, since morning is long gone… breakfast for dinner is totally okay in my book. A stack of Puffy PB Banana Pancakes are fit for the celebration.

Meal Plan | Week of February 24

Woo! Week #3 with an official meal plan — going strong!

I can already tell that pre-planning (most) of my eats for the week has helped to reduce CrossFit cereal cravings and unnecessary snacking. The cutesy templates are simply a guide to what I will eat for the week, but I’ve been flexible switching recipes from one day to another.

You may notice the butternut squash recipe from last week is back again. It was the one recipe I procrastinated all week long, so it’s on deck for Tuesday night’s roommate dinner, mmm.

I can totally see how it can be addictive. I’m having a lot of fun with this whole meal planning thing. My first week with an official meal plan went swimmingly. I didn’t make the Quinoa-Stuffed Bell Peppers, so that is on tap for today’s Prep Day. I think they’ll make an excellent lunch candidate. It’s the roommate’s turn to make dinner this week, so I’m off the hook for one meal.

Love Your Bod WOD

Good morning lovelies!

I thought with Valentine’s Day around the corner, we could give our muscles a little love with a heart-pumping workout… it is Workout Wednesday, after all. Inspired by my crush on CrossFit, I give to you the Love Your Bod WOD.

Workout Notes:
  • Lunges – walking (alternating legs), or jumping lunges if you want the extra burn
  • Sumo Squats – may do with or without added weight
  • V-ups

If you do the workout (any given day or time), leave your completed WOD time in a comment below… just like we would write on the whiteboard at a box.

Meal Plan | Week of February 10

I’m going to try something new… perhaps you’re familiar with it; it’s called meal planning! You’d think I would have fallen into this habit easily as a Type A foodie; but it wasn’t until I moved in with my new foodie roommate that I was inspired to do so. 

The two of us decided to make dinner for each other once a week. She set the standards high with creamy cashew butternut squash risotto and the most delicious raw kale & brussels sprouts salad.

I found a cute menu planning template online and began browsing Pinterest and my favorite blogs and websites for recipes. Then, I created a shared Pinterest board to pin ideas for future roommate dinners.

Recipes:

  • Creamy Broccoli White Bean Soup
  • Penne with Balsamic Sweet Potatoes, Baby Spinach & Parmesan 
  • Quinoa-Stuffed Bell Peppers

I’m starting with a modest meal plan, with just three “real” recipes for the week. I’m banking on leftovers and a couple big salads to fill in the blanks. 

Yesterday, I shopped – at Trader Joe’s and the farmer’s market – for this week’s recipes and my weekly staples. See my {fall} kitchen staples list for the gist of how I stock my kitchen.

Winter WOD Killa {Playlist}

I may have my Mama Hill moments and listen to Amos Lee and Colbie Caillat, but let me tell you a secret. When it comes gym time, the dirty the music, the better.

I try to avoid listening to the lyrics (because I know I’d be appalled if I did), but I’m all about the “ghetto” tunes when it comes to producing that epic endorphin high.

I put together a playlist of some tracks that have been getting me pumped up at the box this winter, killin’ WOD after WOD.

Healthy Holiday Challenge

The holidays are here! Well, maybe not technically until Thursday, but I bet the indulgences have already begun.

The holiday season is such a wonderful, cheerful time of year, but it can often be bothered by anxious thoughts about the continual parade of cookies and cocktails. 

The holidays are meant to be savored, not suffered through. 

Life is about balancing the sweets with the sweat seshs. 

Last November, I hosted a Holiday HIIT Challenge (recognize the outfit!?); this year, I want to celebrate the season by holding a Healthy Holiday “Challenge” for myself and whoever else who would like to participate.

To participate, all you do is use the hashtag #sweatdailyindulgeoften in reference to the WOD you just killed, the long run you endured in winter weather, the two pieces of apple crumb pie you devoured with extra whipping cream, or the pomegranate martinis you toasted to with friends. 

Essentially, it is a simple way to share the holiday spirit and spread fitspiration throughout this festive time of year.

I wasn’t supposed to run today – according to my new 10K Training Plan – but I couldn’t stop myself.

I hopped on the treadmill for a version of my 4-3-2-1 treadmill workout (20 minutes // 2.75 miles). 

After wiping off the sweat, I was super excited to change into my new Reebok #getafterit tee that I won from Healthy Ashley!

CrossFit Cravings

I’m guilty.

I just killed my WOD.

It happens after a not-so-great Wednesday.

I had emotional energy to burn.

It took 18 minutes to put out the flames.

274 reps. Done and done. #WODkiller

Cereal! I know, I know. You might imagine as the Nutrition Nut, that I eat square meals for breakfast, lunch, and dinner. 

Well, I’ve got news for you. This girl eats cereal for dinner… often. I like to think I listen to my body well, and well… I CRAVE cereal after evening workouts. 

Seen above: GF Rice Chex, GF Love Grown Foods granola (oh hey, GIVEAWAY!), 1/2 banana, unsweetened almond milk, and a small spoonful of almond butter… because I eat the stuff like it’s going extinct.

I will add that in order to “approve” of my continual cereal craving, I’ll eat some savory protein-rich food beforehand (i.e. tuna or eggs). It’s all about balance ;)

And then I’ll dive into some form of dark chocolate, such as this bag of nutty bites I polished off tonight. #addicted

First Date with #Fran

Excuse me, October. Where did you go!? Really, though… is it already time to count down the days until Thanksgiving? Unreal. 

One day at time. Let’s talk about today’s meals and moves. There were some good ones!

First things first: breakfast. I celebrated Waffle Wednesday with #GF toaster waffles, almond buttah, banana, hemp seeds and honey. It never gets old.

For lunch: the last bowl of my vegan black bean sweet tater quinoa chili with creamy avocado. Definitely glad I checked that off my Fall Bucket List.

Fast forward to 5:00pm and I was antsy to get moving after a long day at the desk. A fast 4-mile treadmill run in 31:30 (including 5 minutes of walking) was a sweaty way to warm-up for my date with Fran.

Fran is a classic CrossFit benchmark WOD, meaning it’s used to measure your progress. My first official WOD at my new box was “Messed Up Fran” on September 13th, so I had an idea what I was getting myself into; I’ve never done the original WOD, so I was still a little anxious for my date tonight. Unfotrunatly, I can’t compare the two WOD times, as the first included running, but I did make an improvement on the thrusters: 45lbs. to 55lbs. #progress

An intense workout meant a reason to celebrate Halloween in adult fashion (and cross another item off my bucket list).

- moved clear across the country to a new state for the second time
- hopped from one AirBNB to the next for 6 weeks while looking for a house to call home
- made new friends, virtually & IRL
- binge watched more TV shows than I can recall
- leveled up as an entrepreneur: hitting milestones with my virtual assistant and @beautycounter businesses
- voted for a new president 
- ascended new trails and explored alpine lakes of the Pacific Northwest 
- adapted: to Zoom holidays, takeout, and masked faces becoming the (temporary) norm

This challenging year was all about appreciating the little things while living through some really BIG things. 2020 had more than a few lessons to teach us all. Through a pandemic, pivotal change in presidency, and loud cry for human rights, I see very clearly how privileged I am. It was the year to let go of plans and lean in to a new perspective. 

After all, hindsight is ②⓪②⓪.

Wendy and I met here on IG, and what started as a business relationship and accountability partner has turned into a special bond that transcends any walkie-talkie or social media app. This creative spirit has not only inspired me to get after it and dream bigger as an entrepreneur, but in the same way has encouraged me to honor rest and play: whether it’s giving each other kudos on Strava for tackling a run, building badass business plans and packages, or simply holding space to share the wins and the many woes, personally and professionally, of a memorable year.
