Dark Chocolate Almond Butter Cups

I’ve been ploughing through jars of almond butter these days. It seems to find a way into almost every meal of the day; it’s certainly a permanent item on my kitchen staples list.

On a mission to create a healthy treat, and use up a bag of dangerous dark chocolate chips causing trouble in my cupboard, I decided upon Dark Chocolate Almond  Butter Cups jazzed up with crunchy pepitas and sea salt to give them gourmet Fall flair.

2011: a continuous journey.

Tomorrow is New Year’s Eve (as if you weren’t aware).

Hard to believe 2011 is on its way out the door – bye!

At the end of 2010, I declared:

“Instead of making a bunch of New Year’s resolutions, I want to let 2011 “resolve” me. I’m handing over the control to Life, and am quite excited to see what positive changes and adventures it has for me.”

Even so, I had a few hopes & dreams for the new year, which I thought I’d revisit today.

  • Erase the word “perfect” from my mental dictionary.

This is a constant work in progress; it wasn’t “resolved” per say, but I made many steps (including the Positive Monday Series) towards becoming the more carefree person I would like to be.

  • Say good-bye to my sugar addiction.

I gobbled up my fair share of dark chocolate this year, but I will say I think my serious sugar struggle has improved since I began eating a low-gluten diet this summer (more details to come).

  • Run a sub 1:40 half-marathon.

I ran 2 half-marathons this year, running a sub-1:40 in March with a time of 1:39:41. I hope to set a new PR with Half-Marathon No. 6!

2011 was all about self-improvements. I attempted to let go, I strengthened relationships, I trained, I studied, I laughed, I baked, and I definitely smiled more (continued from my 10 in 2010 Goals).

I also accomplished 2010 Goals #4, 5 and 6 – finally!

Oh, well hey there! :) Long time, no see write. The Nutrition Nut hasn’t gone anywhere. I’ve just… um, been busy… no not exactly. I honestly wish that were the case… and I presume it will be come Monday.

I start school Monday. Summer is making its departure all too soon.

Anyway, I’m headed to Fleet Feet for a nutrition workshop (geek!) in a bit before I meet a couple of my girlfriends to stroll the Thursday Night Market and pick up some local produce – peaches please!

But before I dash out, I want to share with you this recipe I whipped up in my handy dandy food processor yesterday.

We all need a treat sometimes… especially after donating your second pint of blood.

Cashew Chocolate Chip Cookie Dough Balls {Vegan*}

Original Recipe @ Love Veggies & Yoga

  • 2/3 c. raw cashews
  • 1/3 c. rolled oats
  • 2 T brown rice syrup
  • 1 T pure maple syrup
  • 1 tsp. pure vanilla extract
  • 1/4 c. chocolate chips

In a food processor, combine the first five ingredients until they are finely chopped and clumping together. Add the chocolate chips and pulse a few times just to incorporate. Roll into bite-sized balls. Store in the refrigerator in an airtight container.

*Depending on the chocolate chips you use. I used Ghirardelli 60% cocoa chips.

Also, g-free friendly!

Makes approx. 1 dozen balls.

I’m not a fan of raw cookie dough – gasp! – but these… I am most definitely a fan!

 

I plan to eat these for a light summer dessert, pack one or two for upcoming lectures (snooze), pop one as a glucose shot before a run, or perhaps swirl one into banana soft serve!? Yes, I must do that stat.

This college foodie is off to the running store and farmers’ market…

It’s no secret that I suffer from chronic anxiety and panic attacks. Or at least I don’t intend it to be. Because while there can be a lot of shame and embarrassment around both of these, I know I’m not alone in my experiences. While I’ve leaned toward the more anxious side most of life, my bothersome anxiety has steadily increased since my mid-twenties - some periods being worse than others. 

It’s not a complete surprise that my mental health has taken a dip during my first full gloomy Seattle winter — in the height of a pandemic. 

Here are some ways I have been nurturing my body & mind as I work with a team of practitioners to work on understanding the **root causes** of my panic, and to live with more ease. 

» no coffee (not even decaf)

» meditating regularly - I’m using @insighttimer 

» gentle movement

» weekly therapy sessions

» attempting cold showers (this is hard for me!): if you’re interested, you can research how this impacts the nervous system

» working with a naturopathic doctor to focus on gut + hormone health

» trying a new Rx - a decision that took years of consideration

» lastly, opening myself up to vulnerable conversations/sharing my story and my experiences in efforts to reduce any shame and connect with others

Leavenworth, WA • Where To Eat🍴 I was expect Leavenworth, WA • Where To Eat🍴

I was expecting all things beer, brats and pretzels in Leavenworth (not really my jam) 🍺🥨🧀, and while there’s plenty of it, I was delighted to find plenty of delicious eats for my “foodie” taste. 

We went to all of these 3 places more than once during our quick stay - highly recommend! 

☕️ @argonautespressobar: Located at one end of Front Street, this adorable coffee bar has delicious espresso drinks, breakfast items, and the best view! 

🥐 @tumwaterbakery: Incredible pastries, avocado toast on artisanal bread that’s a feast for your eyes... and I’m eager to go back and try their wood-fired pizza! 

🍜 @yodelinbroth: Literally some of the best food I’ve had (ever!), and that’s saying a lot. I had the Yodelin soup with housemade wild PNW halibut bone coconut curry broth, udon noodles, heaps of veggies and wild salmon - it was nourishing to my core as we ate it outside in 30 degree weather. I even bought some of the broth to recreate this meal at home, yum!

winter wonderland getaway ✔️ We had snow much winter wonderland getaway ✔️

We had snow much fun exploring the picturesque Bavarian town of Leavenworth, WA for a much-needed mid-week getaway to the mountains. 🏔

We stayed in a cozy little cabin @logecamps right on the Wenatchee River (one day I’ll be back to stay at the stunning @phleavenworth), played in Enchantment Park, took a drive to Lake Wenatchee, and discovered some of the best food downtown (I’m saving my food recs for another post).

Nestled between the snow-capped Cascade Mountains with the river running through town, it’s quite magical in the middle of winter. ❄️ I’m already dreaming of heading back for some summer adventures!
