I deem green figs the next best ingredient for green smoothies. Thank you Peanut Butter Runner for introducing me to one of Trader Joe’s newest frozen items: organic green figs. These babies are BIG. I adore fresh figs, but had never thought about using them in a smoothie.
Figs are a rich source of magnesium, potassium, calcium, and iron and are high in fiber.
Here’s a recipe I whipped up yesterday afternoon – no sugar added!
Green Fig & Kale Smoothie
serves 1 // gluten-free & vegan
- 3/4 c. Trader Joe’s unsweetened coconut milk beverage (may substitute regular coconut milk)
- 1/2 small frozen banana
- 2 large frozen green figs
- 1/2 T hemp seeds
- 2 large handfuls fresh kale
suggested additions >> almond butter // dates // chia or flax // chard or spinach
