I am completely obsessed with this smoothie. I can not get enough of it. My blender goes through long periods of hibernation – hiding in the kitchen cabinet for months on end – but lately, I’ve barely been able to wash it clean before wanting to whirl up another cold, creamy smoothie. I’ve been averaging 3-4 green smoothies a week; my body is loving it!
This recipe is similar to The Clean Green Monster Smoothie, but I prefer the coconut beverage over the almond milk. It adds healthy fat and makes the smoothie much thicker – yum!
Coconut Mango Spinach Smoothie
Makes 1 (~16 oz.) smoothie.
- 1/2 c. frozen mango chunks
- 1/2 small frozen banana, cut into chunks
- 1 c. (~2 heaping handfuls) fresh baby spinach
- 3/4 c. unsweetened coconut milk beverage
- 1/2 T chia seeds
Add all ingredients to a blender and mix until creamy. Pour into a glass and slurp up immediately!
You might try adding 1/4 of a ripe avocado (for extra creaminess), substituting kale for the spinach, and/or garnishing it with coconut.
