Howdy NNOTR readers! I’m honored to be guest posting for the lovely Hillary today while she is on vacation in New York, hopefully having the time of her life. Ugh, I can only imagine how gorgeous it is up there right now with the leaves changing colors.
Well, since you probably just got done with a long run or some rockin’ kettlebell workout, let’s get to refueling those pretty little biceps, shall we?
Besides blogging, one thing that Hillary and I connect on is that we both live in beautiful Northern California. Technically, I am not a real Californian, like Hillary is, because I’ve only lived here for a year; but, I’ve fallen in love with this small section of the world as if it were my original home. The glorious amounts of fresh local produce, the abundance of fantastic wine, and the unbelievably perfect weather have captured my heart like no other.
And then there’s San Francisco — the home to more restaurants than I could eat at in my entire lifetime, some of which are known around the world for their incredible food. It makes for one very difficult decision when it comes to choosing where to eat, but I managed to narrow it down a few weeks ago when I had the pleasure of the dining at Greens Restaurant for brunch. They served a fresh fig and caramelized onion pizza with goat cheese and sage that was so light and full of flavor, it disappeared from the plate within what seemed like seconds. I’m telling you, it was amazing.
So that’s where the inspiration for this recipe comes from, and while it might sound fancy, it is actually really easy to make. That is, if you follow my suit and buy pre-made whole wheat pizza dough from Trader Joe’s.
Trust me, the slightly sweet caramelized onions and fresh figs paired with savory sage and creamy goat cheese will please your senses in all the right ways.
Fig, Sage & Caramelized Onion Pizza with Goat Cheese
Ingredients
- 1 package store bought pizza dough (I used whole wheat)
- 6 figs, sliced in fours
- 6 sage leaves, sliced
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/2 red onion, sliced
- 1/4 cup chopped walnuts
- 1/2 cup goat cheese crumbles
Directions
- Preheat oven to 425°F and line a cookie sheet with parchment paper or prepare a pizza stone.
- Warm olive oil over medium heat in a large skillet. Add onions to the skillet and stir so that they are well coated in the oil. Sauté for about 15-20 minutes and then add the salt and mix well. Continue to sauté for another 10 minutes and set aside.
- On a lightly floured surface, roll out the pizza dough into a 12”circle. Transfer dough to a cookie sheet lined with parchment paper or a pizza stone.
- Separate onions from excess liquid and spread them out on top of the dough. Top with figs, walnuts, and goat cheese then place in oven and cook for 20 minutes.
- Remove pizza and top with fresh sage then place it back in the oven for an additional 5-10 minutes, or until edges of dough are light golden brown. Serve with a glass of your favorite wine and enjoy!
Hopefully you are able to find fresh figs on sale at the market before they are all gone and give this pizza a try because it’s a tasty one.
