Holiday Super Oats™ Granola [& GIVEAWAY]

Granola is one of my one of my favorite things to bake as it is nearly fail-proof.

It is also an easy DIY holiday gift. While it’s a sweet tradition for many to give gifts of sugared and swirled and icing-smothered Christmas cookies, your friends and family will undoubtedly appreciate a healthier treat delivered to their door or stuffed into their stocking.

I have made and shared a good deal of healthful granola recipes on Nutrition Nut over the years, but this might be by far the simplest.

Holiday Super Oats™ Granola

Makes approximately 6 cups // gluten-free + vegan

  • 1 bag Nuts & Seeds Super Oats™*
  • 1/2 c. unsweetened coconut
  • 1 c. shelled + roasted pistachios
  • 1/2 c. dried cherries
  • 1/3 c. coconut oil
  • 1/3 c. pure maple syrup
  1. Preheat the oven to 325F.
  2. In a large mixing bowl, combine Super Oats™, coconut and pistachios.
  3. In a small saucepan, heat coconut oil and maple syrup. Pour over oats and mix thoroughly.
  4. Bake in a glass baking dish for 20 minutes – then stir.
  5. Bake for an additional 10-12 minutes until golden brown.
  6. Mix in dried cherries.
  7. Let cool. Store in airtight container, or wrap in mason jars and ribbon to give as a holiday gift.

*ingredients: gluten-free oats, chia seeds, almonds, quinoa flakes, amaranth flakes, pumpkin seeds, walnuts, flaxseed

Tuesday Tidbits | 4.8.14

Here we go… Tuesday Tidbits, Round 12.

1. A huge shipment from Pressed Juicery is in route to my door, so feel free to stop by during happy hour this week for a kale cocktail.

2. If you haven’t already, enter to win my $50 Albion Fit Giveaway! Albion has all the goods to brighten up your spring workout wardrobe.

3. Did you hear that I ran 8.5 miles on Saturday!? I still can’t believe it. I think it has been close to a year and half since I’ve ran said distance. Although I’ve surpassed one of my April Intentions, I do hope to accomplish one to two more long runs this month.

4. With plans of increased running, I am in the market for a new pair of sneaks. Anyone have any input on the Mizuno Wave Rider 17?

5. Bad news… my cold cereal for dinner habit has struck again. As a Love Blogger, problems like this exist when you get a  “love drop” of Power O’s, Love Grown Food’s newest product (which, by the way, gets two thumbs up).

6. My journey to become a certified holistic health coach is zooming by. The pace of my work load is picking up slightly, but I feel more inspired by IIN’s program with each new module that I open.

7. I get excited when P tells me he bought kombucha at Whole Foods. (It’s the little things.) If you haven’t caught onto the kombucha craze, read up >> Probiotics 101.

8. Spring has officially sprung… meaning I need to make mint iced coffee and eat strawberry salads on the regular.

9. I recently made a pot of coconut curry carrot soup with carrots from my company’s estate garden. Six ingredients. Devoured it.

1. I have not had my usual iced coffee the past two mornings — who am I? Therefore, I apologize for the decaffeinated mistakes in this post.

2. Global warming is starting to scare me >> 77F in the middle of November!?

3. The intuitive eating is still going strong around here. The other day on Facebook, I shared an article I wrote (almost two years ago now) about mindful eating << check it out.

4. My IIN materials arrived last week in a big red box; it seriously felt as if Christmas came six weeks early.

5. In celebration of the blog turning FOUR last Sunday, I’m hosting a Love Grown Foods Oat Clusters GIVEAWAY {ends tomorrow}.

6. I have never been a big sale shopper, but I’m kind of obsessed with online shopping via Ebates.

7. Butternut Squash & Kale Lasagna Roll-Ups surely have to happen in my kitchen stat. I heart Sarah’s recipes!

No way — four years old!? It couldn’t be.

It’s hard to believe that I have been writing this little blog for FOUR years! I can’t imagine my life without it. I consider it a piece of my identity now. Finally, after four years of writing (850+ posts!), I feel much more assure of my voice on the world wide web.

I’ve come a long way since writing my very first post on November 10, 2009. It makes me giggle a little every time I see it (as do many other young posts).

I cannot formulate the amount of time I’ve spent behind the scenes of this space on the Internet. While I make a little extra pocket cash from this side gig of mine, I surely do not do it for the nickles and dimes.

I do it for the connections I’ve made with you; for the inspiration I get daily from being a part of this creative and motivating community. I do it for the self-expression and the self-exploration. I do it because I feel at home in this industry of foodies, recipe-creators, wellness experts, fitness gurus, and healthy people living their lives happily and honestly.

THANK YOU for reading, commenting, supporting, and cheering on Nutrition Nut on the Run. Here’s to running with you for another four years…

Gooood morning, lovelies! I am super excited about the giveaway I have for you today!

I’m not just saying this because I am a LOVE Blogger, but Super Oats > Hot Oats > Oat Clusters. Seriously, Love Grown Foods, you just keep getting better and better.

I was up and at ’em bright and early this morning. Thankfully, I had strong coffee waiting in the fridge to get me buzzed about the day ahead.

As an iced coffee addict, I’m surprised I hadn’t put this Trader Joe’s item in my shopping cart before last night. I’ve gotta play around with the mixing ratios; though, I give it two thumbs up so far.

This bowl of Super Oats – mixed with banana and topped with organic raspberries, hemp seeds, and a lake of creamy almond butter – definitely has something do with my super Saturday, so far.

Next up — a jog in the park! I ran a total of 7.5 (pain-free) miles this week. That is something to smile about :)

It’s no secret that I suffer from chronic anxiety and panic attacks. Or at least I don’t intend it to be. Because while there can be a lot of shame and embarrassment around both of these, I know I’m not alone in my experiences. While I’ve leaned toward the more anxious side most of life, my bothersome anxiety has steadily increased since my mid-twenties - some periods being worse than others. 

It’s not a complete surprise that my mental health has taken a dip during my first full gloomy Seattle winter — in the height of a pandemic. 

Here are some ways I have been nurturing my body & mind as I work with a team of practitioners to work on understanding the **root causes** of my panic, and to live with more ease. 

» no coffee (not even decaf)

» meditating regularly - I’m using @insighttimer 

» gentle movement

» weekly therapy sessions

» attempting cold showers (this is hard for me!): if you’re interested, you can research how this impacts the nervous system

» working with a naturopathic doctor to focus on gut + hormone health

» trying a new Rx - a decision that took years of consideration

» lastly, opening myself up to vulnerable conversations/sharing my story and my experiences in efforts to reduce any shame and connect with others

Leavenworth, WA • Where To Eat🍴 I was expect Leavenworth, WA • Where To Eat🍴

I was expecting all things beer, brats and pretzels in Leavenworth (not really my jam) 🍺🥨🧀, and while there’s plenty of it, I was delighted to find plenty of delicious eats for my “foodie” taste. 

We went to all of these 3 places more than once during our quick stay - highly recommend! 

☕️ @argonautespressobar: Located at one end of Front Street, this adorable coffee bar has delicious espresso drinks, breakfast items, and the best view! 

🥐 @tumwaterbakery: Incredible pastries, avocado toast on artisanal bread that’s a feast for your eyes... and I’m eager to go back and try their wood-fired pizza! 

🍜 @yodelinbroth: Literally some of the best food I’ve had (ever!), and that’s saying a lot. I had the Yodelin soup with housemade wild PNW halibut bone coconut curry broth, udon noodles, heaps of veggies and wild salmon - it was nourishing to my core as we ate it outside in 30 degree weather. I even bought some of the broth to recreate this meal at home, yum!

winter wonderland getaway ✔️ We had snow much winter wonderland getaway ✔️

We had snow much fun exploring the picturesque Bavarian town of Leavenworth, WA for a much-needed mid-week getaway to the mountains. 🏔

We stayed in a cozy little cabin @logecamps right on the Wenatchee River (one day I’ll be back to stay at the stunning @phleavenworth), played in Enchantment Park, took a drive to Lake Wenatchee, and discovered some of the best food downtown (I’m saving my food recs for another post).

Nestled between the snow-capped Cascade Mountains with the river running through town, it’s quite magical in the middle of winter. ❄️ I’m already dreaming of heading back for some summer adventures!
