Wishing for Words

Hi.

I’ve spent all day trying to write a post for Change The Way You See, Not The Way You Look Week in celebration of the Operation Beautiful book release. All week readers and bloggers have been participating in this exciting time for the positive post-it note movement by posting their personal experiences about body image, self-confidence, and the ultimate healthy balance so many of us strive for.

I wasn’t able to get my story onto paper today. Whether it’s writer’s block or still a lack of self-confidence to share something so so personal to anyone, I don’t know =/

I hope I’m able to dig a little deeper at some point and share a bite of my true relationship with food, but all I have for you now is another Fiesta Bowl.

All good things: black beans, sautéed onion, yellow bell, and zucc, white cheddar, avo, salsa, and blue corn tortilla chips – a satisfying, 10-minute meal.

Where’s the Zucchini Parmesan recipe? I haven’t forgotten; bare with me as my blogging is all over the place. That delicious thing above was eaten yesterday. I know… what’s up?

So… since I’m doing a horrible job talking about anything food related, shall we try fitness? I went for an afternoon run today. I rarely go for afternoon runs – it’s usually done early morning, or in the evening. Running in the Redwoods at 4:00pm made me feel like I was in high school at cross-country practice again. Ahhh, nostalgia. I ran for 50-minutes, then changed outta my sweaty shorts and tee into some stretching gear before I met my mom for a 75-minute yoga class. I say it ev-er-y single time, and I’ll say it again, make me do more yoga pleaseee! The hilly run + hour of easy elongation paired each other perfectly.

Hello & Happy – almost – Friday!

I really have nothing profound to share tonight. It was just another ordinary day for The Nutrition Nut on the run. It went a little something like this:

8:00am: roll outta bed.

8:10am: toast a piece of zucchini bread + boil tea water.

8:20am: eat + read [blogs, of course].

9:00am: shower + dress.

9:55am: in the car.

10:00am – 12:00pm: work.

12:30 – 1:15pm: quick lunch with mom.

1:30 – 1:50pm: dentist appt. to polish my pearly whites.

2:00 – 5:30pm: watch the little rascals.

6:00 – 6:26pm: runnn.

7:00pm: decide what to make for dinner. off to the store…

7:30ish: voila!

Can’t Complain

There aren’t too many things I can complain about right now. Well, maybe the wind. I’m not a fan of windy weather. I suppose it’s another excuse to wear my cozy Uggs in the middle of June though. Despite the less than ideal climate, home life is pretty plush; the eats are particularly superb.

The following meal might be one of my very favorite dishes… ever! That’s huge, folks. I made this once last summer, and I’ve been anxiously awaiting peach season ever since.

Summer Salmon with Apricot Peach Salsa

[original recipe @ In Praise of Leftovers]

Life is tough.

Want to make the most-delicious tasting Omega 3’s?

Salsa:

Chop 2 small ripe peaches and 3-4 ripe apricots and place in a small mixing bowl. Add ~1/2 c. chopped onion, 1/3 c. chiffonade of fresh basil, and 1/2 – 1 whole [red or green] jalapeno pepper – finely chopped. Sprinkle with a couple teaspoons of sugar, a pinch of salt, and drizzle of olive oil.

Salmon:

Rinse and pat dry a filet of wild salmon. Brush meat with olive oil and place in a glass baking dish. In a small bowl, combine a few tablespoons of light brown sugar, salt and a pinch each of oregano and thyme. Rub onto oiled filet. Bake @ 450* until fish is opaque, approx. 12 minutes [depending on thickness].

Meanwhile, cook a pot of quinoa [or brown rice] for the whole grain base. Then assemble your summery salmon + salsa and enjoy by candlelight sunset.

Not only do I strive to keep my insides at their healthiest, but I also believe maintaining your outer beauty health is important too. I like to give my mane a healthy trim every 3-4 months. How important is skin/hair care to you? How often do you get your hairs trimmed?

Sweet [Sweaty] Summertime

Thank you for all of the encouraging comments about my desire for direction in my life and with my blog. I thought about what ya’ll had to say; since blogging is still a young hobby in my life, I feel like all I can do at the moment is keep putting one foot post in front of the other. Good things come with persistence, practice, and patience…

So… what have I been eating lately?

Do you see why I loveee mornings so so much? I go to bed dreaming about diving into another bowl of creamy, chewy, healthy steel cut oats… so maybe it’s a tad weird, but that’s how foodies roll, right?

Sweet Potatoes

The other night when I realized I had all four of the ingredients to make Caitlin’s Sweet Tater + Black Beans Balls, I got super excited. They were ridiculously easy to prepare, and ridiculously delicious to eat.

Sweet Tater + Black Bean Balls

  • 1/2 sweet potato, mashed
  • 1/2 c. black beans, rinsed + drained
  • 3 T organic medium-heat salsa
  • ground flax

To cook the potato, pierce with a fork and then microwave for appox. 6 minutes until tender. Meanwhile, preheat the oven to 350*. Combine the mashed potato, black beans, and salsa in a small bowl. Roll into balls [should make between 6-8]. Spread the flax onto a flat surface and roll each ball in the seeds, to coat. Place on a greased baking sheet + let cook for about 20-30 minutes, depending on size. Enjoy with sour cream or Greek yogurt – yum!

After the sweatiest 1-hour spin class tonight + 1/2-mile jog, I came home stoked for sweet taters: round 2. I’ve made renditions of this salad quite a few times before, substituting the potatoes for squash, and either way, it’s quite the taste bud pleaser.

To make: Peel 1 large sweet tater + chop into bite-sized pieces. Place in a small bowl, drizzle with real maple syrup, ground flax, cinnamon + coarse sea salt. Mix to coat. Spray baking sheet with chlorofluorocarbon free canola [or olive] oil and bake in a preheated 350* for appox. 30 minutes. Then place your hot taters atop a hefty portion of organic spinach, creamy avocado, chevre, and red onion. Finish it off with a drizzle of olive oil + balsamic and fresh black pepper.

So… what have I been doing lately? Well, let’s see… soakin’ up the sun + sweating a ton!

I may be a California girl, but that does not mean I’m necessarily a summer/sun lovin’ girl. Perhaps a shock to some, but my body was raised in a climate that rarely exceeds 60* F, where rain is the norm most of the year, blue sky is received with a celebration, and you wear your winter coat to the windy beach.

That’s to say, I don’t know what to do with myself when I wake up in the morning to an apartment that’s a whopping 82*! So far I’ve figured out to stock my fridge with a huge pitcher of ice-cold green tea… and forget about doing laundry; there’s no way I’m putting on any real clothes – swim suit + shorts is all I need.

I'm In Love

…with spinning!

I had a kick-butt workout last night!

  • 1.5-mile run [indoor track]
  • 12-mile ride [spinning for 32 min.]
  • 1.5-mile run, including sprint intervals [indoor track]
  • + 4 x 15 “knee-to-chest step raises”

The new spinning bikes at the gym are awesome. I finally found something to push me to that next “level”…and it’s such a fun way to cross-train. As much as I would love to just run, and run, and run…I know that is not what’s best for my body. Drenched in sweat and high off endorphines, I hurried across campus to my bi-monthly Nutrition and Food Science Association meeting. I scored a sweet tee:

At home and out of the rain, I scarfed down a huge piece of leftover pizza while catching up with a friend on the phone. Then it was time to study my fruits & veggies for my Elementary Foods exam.

Today has been one of the longest Wednesdays to date. I was at school from 10:00am – 6:30pm! I was really hoping to post this morning before I left home, but clearly that did not happen. I inhaled a yogurt mess of 2% Greek, 1/4 cup Raisin Bran, 1/4 cup Humboldt Honey Granola & 1/2 banana, tossed my lunch into my backpack, and was out the door.

After my Elementary Foods exam [which went well, or so I feel], I had an hour and half to kill before my last class, so I decided to search for something to satisfy my already empty tummy. What is better than a hot latte in the middle of a long [wet & cold] day? I fought and fought the temptation, but at last…I caved and lost the Coffee Challenge. It was definitely worth it though. After a week and half of being espresso-free, my grande decaf latte with raw sugar was tastier than ever. However, this means no Friday Starbucks treat for me.

I was famished by the time I finally got home, so I whipped up my favorite 3-minute-meal:

I’m glad I made it through the day in one piece. It’s been one heck of a Hump Day! I’m feeling pretty prepared for my Statistics exam after tonight’s review session, and am looking forward to getting on the bike again tomorrow. Spinning = love.

Work It Out

Hi Lovely Readers! I was happy to read that so many of you were excited about the little tale this morning. I got the melted jam idea from another blog, but now can’t remember which.

After finishing my morning post, I made myself a latte – or technically a cafe au lait (with 1% milk) – and a sprinkling of raw sugar…mmm. I’m going strong with my Coffee Challenge and have decided to extend my goal until this Friday (rather than Monday). I have a tough school week ahead of me, and thought if I can avoid buying coffee until Friday, then I can reward myself with a treat!

Lounging around in my pajamas all morning meant a late lunch…but when I got around to it, this is what it consisted of:

After studying up for my Elementary Foods exam, I got antsy to exercise. My muscles are still extremely sore from the past 4 days of exercise, but I wanted to work out some of the lactic acid build-up. Nothing hardcore:

Cardio

  • 1 mile track [alternate jog/walk every 2 laps]
  • 20 minutes: ARC Trainer
  • 1 mile track [alternate jog/walk every 2 laps]

Abs

  • 2 x 20 stability ball crunches
  • 2 x 20 reverse crunches
  • 2 x 10 side crunches
  • 2 x 10 stability ball “knee-to-chest rollers”

- voted for a new president 
- ascended new trails and explored alpine lakes of the Pacific Northwest 
- adapted: to Zoom holidays, takeout, and masked faces becoming the (temporary) norm

This challenging year was all about appreciating the little things while living through some really BIG things. 2020 had more than a few lessons to teach us all. Through a pandemic, pivotal change in presidency, and loud cry for human rights, I see very clearly how privileged I am. It was the year to let go of plans and lean in to a new perspective. 

After all, hindsight is ②⓪②⓪.
