Morning! Happy Workout Wednesday. I don’t remember the last time I made breakfast, snapped a few photos, uploaded them to my computer and wrote a blog post before going to school… but I did today!
It’s been a while since y’all have seen one of my “oatmeal” bowls.
Things have changed.
First of all, there are no oats in that bowl. Gluten-free buckwheat is the hot cereal of choice these days.
I know what you see above isn’t any five-star culinary masterpiece, but let me tell you, it is gosh gang delicious and filling. This bowl will hold my hunger through hours of academia. Why? Milk and peanut butter, a.k.a. protein and healthy fat. Don’t be scared of them, friends ;)
Spiced PB & Banana Buckwheat Bowl

1/2 c. 1% milk + 1/2 c. water

1/4 c. creamy buckwheat

1/2 ripe banana, sliced

1T raisins
-
1/2T ground flax
-
cinnamon/nutmeg/ginger — Key ingredients!

scoop of {creamy, salted} pB
In a small pot, bring milk + water to a boil (be cautious as milk tends to boil over). Stir in buckwheat and banana slices. Stir frequently over medium-high heat to create a voluminous, whipped texture. After a few minutes, add raisins – to plump them up – and spices. Lastly, stir in the ground flax and give the cereal a little more whipping. Pour into a bowl and serve with a spoonful of creamy peanut butter – mmm!
Now that I’m fueled, I want to check-in on my Holiday HIIT Challenge. I can not fathom that it’s already the middle of November – too weird – meaning that I am already halfway through the challenge I created to continue throughout the month. If you’ve taken a peek at my workout log, you’ll notice there are a whopping 3 HIIT workouts recorded. The challenge objective is to do HIIT workouts 2-3 times every week – eek!
I can’t explain why I initially “slacked off”, but I can tell you now that I’ve been batting a cruddy cold since Saturday morning and have not seen my exercise attire since Friday afternoon. Excuses, excuses.
Honestly, looking at my HIIT workout log makes me feel pretty horrible… like a flake, not following through with something so simple as a couple quick, interval workouts each week.

Is this important enough to feel shameful about? Who am I disappointing other than myself?
I would love more than anything to make it to the WREC today, but I can’t promise it. This cold-weather crud has got to go before I head home for the holidays tomorrow!
Only 1 long day between me and Thanksgiving Break…
