everything but the kitchen sink.

June 17, 2011 by Hillary 10 Comments

My crepe lunch kept me full all.day.long, so when dinner hour rolled around, I wasn’t in the mood for much more than a summer salad. We threw everything but the kitchen sink into our bowls. Say hey to Nutrition!

greens from the garden, organic peppers, avocado, fresh English shelling peas, sweet corn, grated beet, red onion, wheatberries, raw sunflower seeds, and a chive flower for garnish… dressed lightly with vinaigrette.

* * *

I’m exhausted and have a FULL day tomorrow, including an 8-mile run and 8-hour catering job, so bed is where I’m headed a.s.a.p.

First, a couple Friday features:

 040

(1) I restocked my organic quinoa supply with two 4lb. bags of from Costco – under $10 each!

013-1

(2) My Almond Butter Dark Chocolate Crispy Rice Treats are featured on the Earth Balance Made Just Right site – cool deal!

Goodnight, foodie friends! :)

That’s a Wrap

November 12, 2010 by Hillary 7 Comments

Hey ya! …and just like that, 1 more week down. Not like I’m counting ;)

It was a pretty typical Friday around here. Thankfully, I didn’t feel like complete crud. Fresh, colorful eats are healthy helpers.

003

Repeat of yesterday much?

007

Crunch!

014

1/2 sprouted wheat tortilla w. roasted garlic hummus, tomato, cucumber, yellow bell, organic lettuce.

After class this afternoon, I felt well enough to hit up the WREC. Though I didn’t feel 100%, the exercise junkie inside me was a bit stir crazy, and running on a treadmill was really appealing… despite the incredibly sunny November blue sky outside.

  • 60-minute treadmill run [7.39 mi.] – Ahh, that’s exactly what I needed!

10 min. @ 8:20 pace

20 min. @ 8:13 pace

30 min. @ 8:06 pace

final 30 min. @ 1.0 incline

  • 20 push-ups, stretch, home…

Speaking of feel-good exercise, did y’all see the latest Running & Motivation post at [never home]maker? This is the most wonderful thing I’ve read all week! Beautifully said, Ashley.

You need to move your body for more than burning calories.

You need to sweat for more than dropping pounds.

You need to push it 10 minutes longer because it feels good.

Or feels difficult in a way that takes you to a place of nirvana.

You need to CRAVE that physical activity.

It needs to become a part of you.

Or you’ll never, ever get why you should do it.

* * *

Feeling a little bit anxious about the work I have cut out for me this weekend, but be sure to stop by tomorrow. I have not one, but TWO pumpkin recipes coming your way [yay for Cookie Friday!] + I will announce the winner of my granola giveaway – yum yum.

Night!

In Memory of a Sugarnut

November 11, 2010 by Hillary 4 Comments

School holidays are appreciated. Especially when you feel like absolute crud.

They give you time to wake up when your body’s ready, make a pot of pumpkin oats, leisurely reply to e.mails, sip soy lattes, stroll through Trader Joe’s admiring all of the holiday fare, take a walk to your third grocery store of day on an unsweetened flaked coconut mission – epic fail – and bake granola for your blogiversary giveaway. [Baking granola may be one of my favorite things… ever.]

Though I feel pretty terrible – can not figure out what the heck is up with my stomach (?) – I had a light lunch… that didn’t feel so light.

005

I heart Fuyu persimmons!!

Though I’ve miraculously consumed very little chocolate since Monday [I’m weaning myself off slowly], I couldn’t resist a sample of my exciting find of the day. These were at the checkout counter – evil TJ’s. I couldn’t resist at $1.49.

018

012

Perfect, edible stocking stuffers if you ask me ;)

Quiz 3 Answers: Soy Stuff

Pardon me… I got too excited gabbing about Superwoman Sarah, that I forgot to reveal the answers to Quiz 3. Though, since no one attempted to answer it, you probably aren’t that interested anyway. Too difficult? Don’t give a darn?

1. This type of carbohydrate commonly found in soybeans is responsible for flatulence [toot toot].

Raffinose – an indigestible oligosaccharide [carbohydrate composed of 3-10 single sugar units] made of the 3 monosaccharides: fructose, gluctose, and galactose. Oligosaccharides cannot be broken down by our digestive enzymes; thus, when we eat foods such as cabbage, broccoli, and legumes [soy beans!], they pass into the large intestine undigested, where bacteria metabolize them and produce gas.

2. Genetically engineered soybeans are rich in which fatty acid?

Oleic Acid – monounsaturated*

3. What are the main fatty acids in soybean oil?

Polyunsaturated*

*Consuming poly and monounsaturated fatty acids may lower blood cholesterol levels.

Are you a soy lover or hater? It’s such a controversial topic [Food, Inc.]…

One cool thing about celebrating my 1 year blogiversary, is that I can look back to what I was up to on any given day in the prior year. In doing as such, I am reminded that one year ago my childhood dog passed away. That was a sad day. Phoebe, whom was named after my favorite nurse from when I was in the hospital, was a special pup… and a nutty one at that. I miss her pink nose, her gentle spirit, and her love of food. That girl had one voracious appetite!

R.I.P. Phoebe Sugarnut* Parker

Phoebe

*I love that I gave her the middle name of Sugarnut when I was in 3rd grade. Some things never do change.

* * *

Per usual, I have some munching on my academic plate to do: case study + 2 science exams.

Hope you enjoyed your holiday,

Hill

Looking Ahead

October 21, 2010 by Hillary 10 Comments

If you haven’t already entered my giveaway for a free case of Chobani Greek yogurt, get to it! & check out the CHOBlog Featured Blogger of the week :)

* * *

Hey there. Happy Thursday! I’m pretty excited about how fast this week is zooming by. I wouldn’t have been able to handle a repeat of last week. I am looking forward to a relaxing fall weekend of cool runs and warm baking. Oh, and I also need to figure out a couple of Halloween costumes. How is it that it’s nearly the end of October!?

Speaking of time flying, I registered for my Spring classes today. It seems a bit early to be signing up for classes that don’t start until the end of January, but I guess it doesn’t hurt to plan ahead sometimes.

Spring Schedule 2011

Biomedical Ethics [Philosophy]

An examination of moral issues arising in medical practice and biomedical research. Among the topics discussed are the responsibilities of health care professionals, the allocation of scarce medical resources, genetic engineering, and the harvesting of fetal tissue.

Health Education Techniques [Health & Community Service]

This course introduces health education theory, curricula, resources, and marketing techniques for use in school and community settings. Students plan, develop, implement, and evaluate effective health education and promotion programs. Students practice professional health education techniques while working with a local organization to implement a community health education.

Nutrition & Disease [Nutrition & Food Science]

This course is designed to develop skills in the use of clinical nutrition in the prevention and treatment of diet-related health problems, such as cardiovascular disease, diabetes, hypertension, and kidney disease.

Writing for Mass Media [Journalism]

Techniques of information gathering and writing for various audiences in the mass media.

This comes out to a solid 12 units. I think I am going to love my weekly schedule. FINALLY, I do not have any classes on Fridays [the only other time I didn’t was in Fall of ‘07]. Three day weekends – yes please. I also just have one class on Monday/Wednesday that isn’t until 3:00pm – sweet! I shouldn’t get too excited though because I will be trying to fill up some of my free space with an internship and/or a J.O.B.

Have you taken any similar classes? I am not looking forward to Biomedical Ethics. It doesn’t sound like my cup of tea, but it’s a requirement for my Upper Division GE Theme: Contemporary Health Issues.

Accident Update

I reported my accident to the managerial staff at the WREC today. They were very nice about the entire thing; I filed an accident/injury report, and we looked at the surveillance video from Tuesday to see if we could find my tragic fall along with any other evidence. We did! If I had a copy of the video, I would show y’all. It was exactly as I had it played out in my head to be. We even figured out who the idiotic culprit was that left the treadmill on. From the camera, we were able to tell the girl dismounted the machine almost 10 minutes beforehand – 10 minutes! If I could track her down to pay my medical bill, I would. All I can do now is allow my body to heal.

Food Footage

I don’t remember the last time I posted a picture of my eats. I’ve still been eating my usual diet: vegetables + dark chocolate.

044

  • organic greens
  • tomato
  • cucumber
  • feta
  • sunflower seeds
  • 1 Dr. P burger
  • seasoned rice vinegar + olive oil

015

Tonight’s salad was REAL… real food, real cooking, real darn delicious! I used Ashley’s salad challenge recipe for my inspiration.

Seasonal Salad for One

  • 1/2 butternut squash, peeled + cubed
  • olive oil, ~2 T
  • real maple syrup, ~2 tsp.
  • fresh thyme, ~1 tsp.
  • sprinkle of cinnamon
  • salt + fresh black pepper
  • 1/2 medium red onion, thickly sliced
  • 1/4 Granny Smith apple, cubed
  • lettuce, ~2 big handfuls
  • honey chevre
  • pepitas
  • balsamic vinegar

Toss the cubed butternut squash with olive oil, maple syrup, thyme, cinnamon, salt + pepper. Roast on a baking sheet @ 400* for 20 minutes. After 20 minutes, add the red onion to the squash and toss together gently. Continue to cook until squash is tender and onions are caramelized, about 20 minutes more. Meanwhile, wash and dry your greens – please! – and arrange on a plate. Then decorate it with the squash, onion, tart apple, crumbled goat cheese, and crunchy pumpkin seeds. Give it a slight drizzle of sweet balsamic and BAM!, you’ve got yourself a real, fall dinner for one.

Well, hope y’all are having a cozy Thursday evening. Have a wonderful weekend!

On a Roll

October 2, 2010 by Hillary 11 Comments

The second day of October kept the good vibes of yesterday alive. The blue October skies say it all.

016

I enjoyed sleeping in this morning and getting woken up by my MOM :) Because we both wanted to get outside and enjoy the lovely fall day, we decided to leave the waffle iron for tomorrow; instead, I made a cool, creamy concoction in my new blender for breakfast in a jiffy.

007

Saturday Special: proudly sponsored by Pumpkin.

  • 2 frozen bananas
  • 1 c. almond milk
  • 1/2 c. organic pumpkin
  • 2 T flax
  • 1 T agave – I’d suggest using less
  • pinch of cinnamon

Top each with 1/4 tsp. coconut + 1 T toasted pecans.

Serves 2.

Neither my mom nor I finished our serving, as the smoothie was surprisingly rich. However, the not-so-sweet Pepita Pecan Pumpkin Muffin balanced out the meal quite nicely.

We did our best not to let the morning get away from us, so we scurried on downtown to the market and filled our basket to the brim with produce.

026

015

4

We admired the Sweet Cottage iced teas and local almonds

027

… but saved our appetites for a light lunch at Tea Bar & Fusion Cafe.

048

We shared a ginger tofu wrap accompanied by a whole wheat tortilla, brown rice, avo, fresh veggies, and miso dressing… plus a side of sea salted edamame. Fresh – yes!

038

042

047

Oh, and of course tea was to be had: ginger peach [unsweetened] – mmmm!

Our food-filled day continued on as we made our way to Trader Joe’s. Again, we loaded our cart with a lot of healthful eats – some staples, as well as a few new finds.

It was a hair past 5 o’clock by the time we unloaded at home, which meant a refreshing spirit was to be had before the cooking got under way. There was a solo Blue Moon beer that had been hiding out in the back of the fridge for far too long – like May! – so, I pop off the top and stuck a fork orange in it!

 055065

Dinner was scrumptious, as it always turns out to be when I dine with my mom.

  • Mixed Greens, HumCo Tomato, Peppers, Scallions and a French vinaigrette
  • Whole Wheat Pasta tossed with Olive Oil, Garlic, Arugula, Green Beans, Lavender Chevre, Toasted Walnuts & Fresh Pepper

Coffee ice cream was the ultimate way to cap the tasty day.

I’m tired, sticky, and a bit stressed about the schoolwork that’s to be done. There’s a lot of excitement coming to NN on the Run in the near future though, so stay tuned!

Hump Day Handstands

September 29, 2010 by Hillary 11 Comments

I’m sort of embarrassed by the photographs you are about to see – the quality, not the content. I have no shame in the contents of my tasty breakfast and lunch… no shame at all.

FOOD.

Today was a winning Waffle Wednesday. I created this ‘recipe’ in my head before getting into bed last night. It made rolling out of bed @ 6:00am so much easier.

009
Nutty Pumpkin Wafflewich
  • 2 Van’s multigrain light toaster waffles
  • smear of TJ’s flax almond butter on each waffle
  • 2-3 T organic pumpkin mixed with agave & cinnamon
  • 1/2 ripe banana, sliced

007

Loved all the different components to this wafflewich. What would you add?

Lunch was almost an exact duplicate of yesterday. Why mess with a good thing?

012

  • 1/2 sprouted wheat tortilla
  • smear of homemade pesto – all gone!
  • 1 Dr. Praeger’s Cali Burger – love the crispy edges
  • fresh romaine & red onion

010

… with a side of lemon H20 in a mason for hydration.

RUNNING WEDNESDAY WORKOUT.

Now that there is NO more WRECPump the rest of the semester [tear], I have to reschedule my Monday/Wednesday exercise regimen. My body was sending me some signals last night after two days of fast running, so I promised I would treat it with a 75-minute yoga class tonight. For some reason, it’s always hard to get myself to go to yoga classes [especially if they cost $$$]. I don’t get the same cravings for yoga as I do for cardio; however, throughout the day today, I imagined myself at the gym doing yoga… not circling the indoor track again and again. Set your mind to something, and you can do it! It’s all mental, all mental. The class was challenging and fun [hello handstands!]. Almost every time I leave a class, I wonder why I don’t make myself practice it more often. I get such a different feeling from yoga than I do from running… but it is a wonderful feel, a feeling of zen. It’s a good possibility yoga may become the new BodyPump :)

Are you a yoga-goer? How often do you practice? Do you have a favorite type of yoga?

Oh… I guess I should mention I did run 1 mile around the indoor track afterwards. Sorry, I just can’t help myself!

* * *

We’re over the hump! I must minimize my to-do list before Friday because I have a special guest visiting for the weekend :)

See ya!

Running Tuesday + Reader Requests

September 28, 2010 by Hillary 10 Comments

Happy Running Tuesday!

Hope y’all had a good day. It was a hot one, wasn’t it!?

School v. Home – I always get a kick outta this. [I live only 4 hours away!]

image image

In other words, there was no chance I was running outside today =[ So, after my morning class I was off to the g.y.m. Goodness, I practically live there. You may call me a gym junkie if you wish; I won’t be offended.

RUNNING

Here’s what my Running Tuesday consisted of:

  • 40-minute treadmill run [4.75 mi.]

5 minutes ea. @ 6.6 & 6.8mph [warm-up]

5 minutes ea. @ 7.0, 7.1, 7.2, 7.3, 7.4, 7.5mph – 1.0 incline

  • 1 mi. indoor track run @ 9:00
  • light strength & stretch

Since we’re on the topic of running… I have been thinking a good deal about my goals for my upcoming half-marathon. After surprising myself with an ~8-minute/mile pace at the Chico Ten, I’ve been reevaluating possible finishing times for SF. I do want to say that this is not what this race is about. Since when did I become such a competitive person anyway!? My main goal is to have a BLAST running my 3rd half with my BFF. However, I feel as though I’ve done some pretty solid training this time around, and squashing an old PR is always rewarding. I could cross something off my 10 in 2010 list, too =]

If you’re like me and don’t have a nifty Garmin Forerunner, you can find pace calculators, such as this one from Cool Running, that can calculate your pace, mile splits, and estimated finish time – awesome!

image

Being curious, I entered in an 8:20/mile pace to see the estimated splits.

image

What do ya think!? Am I nutzo? Hmmm… I should probably check out the course map.

FOOD

Alright, so after a solid indoor run, I came home and guzzled one whole serving of coconut water [as was the case last night, too]. I’ve most definitely acquired a taste for this stuff – love it!

014

012

… and for lunch, a filling wrap of veggies:

  • 1/2 sprouted wheat tortilla
  • smear of homemade pesto
  • 1 Dr. Praeger’s Cali Burger
  • fresh spinach & red onion

I’m off to enjoy my semi-relaxing evening at home – seeing as I got my workout out of the way early today – but first, I want to get your feedback on a few things:

What would you like to see on NN on the Run?

    • More recipes? If so, get specific!
    • More on my exercise regimen?
    • More on my daily diet/eats?
    • More from what I learn in class? Weekly nutrition quizzes?

You tell me… please! I really appreciate your input.

Have a great night,

Hillary

My Mission

September 9, 2010 by Hillary 6 Comments

Hi! I hope you all had a great Thursday and are excited for another weekend. I feel like it just was the weekend, but I’m not complaining! I only have one class on Thursdays; today, I didn’t have anything else scheduled, so I was able to enjoy my ‘free time’. I also enjoyed a few notably delicious eats.

Before class, I ate my first plate of oats. I bet some of you are rolling your eyes at this silly sight, but after seeing many mouth-watering plates of Ashley’s oats, I wanted to give them a try myself. The point of plating your oats, rather than using a standard bowl [or mug], is to cool the hot cereal more quickly for warm summer/fall mornings. It also prevents you from burning the roof of your mouth. Thanks, Ash for keeping breakfast interesting : )

008

1/3 c. steel cut oats, 1 T flax, 1/2 peach, 1 T pecans, 1 tsp. unsweetened coconut

004

After class, I met my roommate at the WREC for a mid-morning workout.

2 mi. indoor track run

55-minute spin class [suppose to be 60 – grrr.]

stretching + a couple planks

Let me tell you what… 1 hour of spin the morning after 1 hour of BodyPump the night before is killerrr. Oh my word, my legs were so fatigued during class – the ‘flat roads’ felt like huge hills today. It probably didn’t help that I ran a couple miles beforehand, but I know that wasn’t the culprit. Strength training hurts so good!

I was running on empty when I got home, so I restored my glucose levels as fast as I could with a filling lunch.

017

Quinoa Wheat Toast + Humboldt Hummus, Sharp White Cheddar, Cucumber, Red Onion & Mixed Greens

015

[other] half of my morning peach

020

… and several swigs of refreshing coconut water [which is now sold at TJ’s!]

After putzing around, cleaning, and an uneventful trip to Target, I was ready to make dinner by 6:00pm.

027

Organic Heirlooms

030

Green Goddess Summer Pesto

032

Voila! Whole Wheat Pasta + Pesto, Tomato, Greens & Honey Chevre

I was a little unsure about the honey flavored chevre in my savory pasta, but it’s the only cheese I have. It was still very edible : ) I am really looking forward to using the sweet roll of goat cheese in other recipes though.

* * *

Enough with food… today in the one class I had [Foodservice Administration], we had an assignment due which was to create a personal mission statement. There were very few guidelines, so I chose to write a little poem. Here’s what I came up with at midnight last night – just thought I’d share.

My Mission

I remain true to myself

whilst

always moving forward,

but never forgetting the past.

I spread inspiration

by eating intuitively –

savoring, appreciating… each and every bite.

Travelling far offers experiences

that allow me to

smile often.

I nourish appetites and souls,

all the while running across another finish line

that strengthens my healthy life.

Dark chocolate covered almonds, iced green tea, physiology… g’night!

Hillary

  • Do you have a mission statement? If not, any idea what it would entail?
  • What would you do with honey chevre? Recipes!?

Clean Eating v. College Craziness

September 8, 2010 by Hillary 13 Comments

I know fall/winter is upon us when I eat my breakfast before there is enough natural light for a decent photograph of my cereal. This saddens me. See the tears? I’m going to have to learn a few tricks to  successful indoor photography sans sunlight since no one – me especially! – likes a blurry, “flashed-out”, pixelated picture.

I attempted to take a few photos of my dark breakfast and dinner, but they didn’t make the cut. Really, though… cold cereal and green burgers are not the most interesting items I consume. You didn’t miss a lot.

By the time I was ready to put together my packed lunch, the sun was high enough in the sky for this picky food blogger. I took advantage of it, obviously.

013

  • Sprouted Wheat Tortilla + Humboldt Hummus, 1 Heirloom, Cuc & Organic Greens
  • 1 crunchy orange stick

017

  • Plain Greek, 1/2 peach, 1/4 c. coconut cashews
  • icy h2o in my new Lulelemon bottle — I <3 Running

After a really awful day of eating – to me, that means random eats that aren’t worth the calories [i.e. horrible, fluffy Baskin Robbins ice cream] – plus a weekend full of indulgences, I was ready to resume with my clean eating today.

What does clean eating mean to me?

My body feels ‘clean’  when I eat a controlled diet rich in fiber-dense whole grains, raw vegetables and fruits, nuts [in moderation], low-fat dairy [again, not too much], a reasonable amount of sugar, and lots of water/tea.

My skin tells me when I’ve OD’ed on sugar, or am not hydrating with water [as is the case currently]. However, I don’t believe clean eating should restrict sweets/indulgences. I ate dessert today [chocolate, of course], and did not feel all that guilty about it. If I want to indulge in treat, I aim for quality, short ingredient list items.

I realize there are many many definitions of ‘clean eating’ out there, especially floating around the healthy living community. This is just my personal view. I’m not a RD, just a nutrition nut : )

It wasn’t terribly difficult to keep my clean eating regimen under control today since I had one heck of a busy Hump Day!

  • 9:00-9:50am Physiology
  • 11:00am-1:15pm Help with Farmers’ Market

The Nutrition & Food Science Association has a booth at the student market every other week. Today we sold veggie wraps and cucumber water, as well as our cute club tees. I’m really going to make an effort to work on Goal #4 this semester!

  • 2:00-2:50pm Human Nutrition
  • 3:00-3:50pm Science of Food
  • 5:00-6:00pm Group Meeting
  • 6:15-8:00pm Gym

12-minute indoor track run [1 mi. @ 8 min. + 0.5 mi @ 4 min.]

12-minute treadmill run [3 min. @ 6.8 / 1 min. @ 8.0 – repeat 3x | 1.0 incline]

60-minute WRECPump

  • eat. shower. blog… homework.

That is my Wednesday in a nutshell. So glad tomorrow is already Thursday – yay for 4-day weeks. Time to get my clean on [room cleaning, that is].

Take care, lovelies!

There is light!

August 30, 2010 by Hillary 29 Comments

Hello Monday, Hello You!

Today was the start of Week 2, Semester 7… 14 weeks + 3 semesters to go — not like I’m counting or anything ; )

I had a full day of classes today, but in between my physiology lecture and lab, I was able to sneak in an appointment with an advisor to double check on my degree progress. Being an organized, Type A student pays off… basically, the advisor confirmed – in less than three minutes – that I am on track to graduate in Spring  of2012 – I can finally see the finish line at the end of my undergraduate journey!

This is huge for me… I started college in 2007 burnt out from striving to be at the top for all of my college prep years. I knew I wanted a college education, but had little drive/motivation and no idea what I wanted to study/do with the rest of my life [heck, I was 18 years young!]. Long story short, I chose to attend Sonoma State University, not paying much attention to the majors they offered; I remained an ‘undeclared major’ for two years. I checked off GE requirements left and right, amongst a few too many useless P.E. and dance classes. At the end of my fourth semester, I was still undeclared, though not undecided. I had done a little research, and found that another California State University offered my dream major: Food & Nutrition Communication. Though, I had developed lasting friendships and thrived with the support from my nearby family, I ‘checked out’ of SSU and headed east. This decision took some guts, but I knew I wasn’t going to find something like what Chico State offered just anywhere. CSU Chico was actually one of the schools I applied to as a senior in high school, but declined their acceptance for another reason.

So, here I am today… somehow starting my fourth year of college. It hasn’t always been easy – I’ve had my fair share of road blocks – but I’ve learned one thing about myself: perseverance. When the going gets tough, I just keep going. Though I will not earn my degree in four years, I don’t believe the extra year it took me to ‘figure out my life’, and change locations/schools in the process, will have any detrimental effects of my healthy future.

Gosh, I could blab for six more hours [can you say gym adrenaline!?], but you wouldn’t want me to do that. So… just a few things:

Life from now until mid-December looks a little like this:

Human Physiology + lab

The purpose of this class is to provide students with sufficient knowledge of human physiology in the hope that each person will wish to become an informed and aware health care consumer or provider. This does not merely include knowledge of vocabulary, but more importantly, it requires an intellectual facility with physiological principles such as negative feedback, synaptic transmission and active transport.

Human Nutrition

Physiological and chemical roles of proteins, lipids, carbohydrates, minerals, vitamins, and water in the functioning of the body. Factors affecting the digestion of foods, use of nutrients, and the body’s need for nutrients.

Science of Food + lab

A study of the physical, chemical, and microbiological aspects of foods; the function of and changes in components during preparation and processing of foods.

Intro to Foodservice Administration

Study of management tools and practices ranging from conceptual to applied as they relate to all aspects of the field of nutrition and food sciences.

There will be a lot of school snacks, such as:

016

raw veggies.
fuji + cheddar cheese.

013

dried apricots + dark chocolate almonds.
PURE bars are yumm-y!

And there will be even more trips to the WREC for some mind ease:

  • 2 mi. indoor track run [mile #1 @ 8:20]
  • 60-minute WRECPump!! <3

Crazy week ahead of me, but I have an epic weekend to look forward to…

Peace, Love + Healthiness,

Hillary

I enrolled in @camp.wellness: a 6-week online course (designed by the inspiring @thehealthymaven team) “helping women in wellness get aligned with their mission and pursue the life of their dreams.” ✨ Later this year, my blog (Nutrition Nut on the Run) turns TEN years old, but my commitment to health and wellbeing precedes the past decade — it’s what I am all about at my core, it’s intertwined in everything I am. It may have taken a cross-country move, ample time to think during my dangerous daily commutes, and hours spent in a cubicle to realize that life is too short to give your passions a mere 50%. If you can’t tell, I’m feeling fired up! 2019 is the year I say YES to cultivating a life deeply rooted in passion and aligned with who I am... everything else can go. #nutritionnutontherun #campwellnessbootcamp
Monday mood: things are falling into place and it feels damn good! ✨ - Today’s salad bowl: romaine, leftover roasted sweet taters and feta from @eatfreshkitchen, their to-die-for “holy kale” dressing + an egg for good measure... just missing 🥑 - #nutritionnuteats #feelgoodfood Yep, that salad is all for me. - romaine - quinoa - avocado - roasted peppers - kalamata olives - feta - (forgot the) cucumber - olive oil + thick ass balsamic Whatcha having for lunch? #nutritionnuteats
